About Us
Marigold Bagels was founded in 2022 by Brooklyn born Mike Rabinowitz with the goal of offering San Diegans a broader choice in artisanal bagels made using the traditional techniques from Mike’s home of New York.
No centralized dough distribution centers or bagel forming machines; our bagels go from bags of flour and ultapure water to warm baked bagels for sale all within our North Park, San Diego bakery. Mike’s proprietary bagel recipe and exacting techniques were honed from his training as an Organic Chemisty, training that demands precision and attention to every step of the process.
Our bagels are classics: high gluten flour, malt syrup, long cold fermentation, boiling in malted water and baking in a specialized deck oven, resulting in the freshest bagels around with a crispy crust with great chew, leading to a pillowy and soft crumb that lends itself to a great traditional sandwiches or pairing simply with one of our house-made whipped cream cheeses. These bagels dont lose their delicious appeal when they cool down; they are every bit as good at room temperature as they are fresh from the oven.
We opened our shop in North Park with the goal of bringing an authentic NY-style bagel shop to San Diego, like the kinds of shops dotting all of the greater NY area and the kind that Mike used to ride his bike to (Schwinn Stingray) to get a fresh sesame bagel with plain cream cheese every weekend. Sometime the simplest things are the best!
Oh, and we make our own Lower East Side half-sour pickles to truly capture the old NY experience right in San Diego.
ONLINE ORDERS
At the moment, we only take online orders on Weds, Thurs, and Fri 8 AM through 1:30 PM for pickup that day anytime before we close (2 PM)

We are making a special bagel in honor of our continuing collaborations with TCS. Super soft and fluffy Marigold Egg bagel with TCS original chicken bacon, egg over easy, and a lime mayo for the most original sando in San Diego.

Bialys, babka, tubs of house made flavored cream cheeses, including vegan spreads, Acme whitefish salad, egg salad, pickles. We are adding more weekly.

Yes. We accept online orders for Weds, Thurs, Fri through for bags of bagels and tubs of cream cheese for pickup. We may offer delivery in the future if we find a partner that offers reasonable delivery fees to our customers.

Yes, our bagel dough is vegan! We use only plant-based ingredients in our dough, with no dairy, eggs, or honey. The exceptions are our Jalapeño Cheddar and Asiago Cheese bagels, which contain cheese. Also, we make our own cashew based spread flavored with only plant based ingredients that is unique and full of flavor.

We say “NY Style” because we use the traditional ingredients and methods of the NY immigrant bagel makers from years back. This means only flours (wheat and barley), purified water, barley and cane sugars, yeast and salt. No commercial bagel mixes or dough enhancers are ever used. And our bagels are only sold fresh on the day they are baked.
