About Us

Marigold Bagels was founded in 2022 by Brooklyn born Mike Rabinowitz with the goal of offering San Diegans a broader choice in artisanal bagels made using the traditional techniques from Mike’s home of New York.

No centralized dough distribution centers or bagel forming machines; our bagels go from bags of flour and ultapure water to warm baked bagels for sale all within our North Park, San Diego bakery. Mike’s proprietary bagel recipe and exacting techniques were honed from his training as an Organic Chemist, training that demands precision and attention to every step of the process.

Our bagels are classics: high gluten flour, malt syrup, long cold fermentation, boiling in malted water and baking in a specialized deck oven, resulting in the freshest bagels around with a crispy crust with great chew, leading to a pillowy and soft crumb that lends itself to a great traditional sandwiches or pairing simply with one of our house-made whipped cream cheeses. These bagels dont lose their delicious appeal when they cool down; they are every bit as good at room temperature as they are fresh from the oven.

We opened our shop in North Park with the goal of bringing an authentic NY-style bagel shop to San Diego, like the kinds of shops dotting all of the greater NY area and the kind that Mike used to ride his bike to (Schwinn Stingray) to get a fresh sesame bagel with plain cream cheese every weekend. Sometime the simplest things are the best!

Oh, and we make our own Lower East Side half-sour pickles to truly capture the old NY experience right in San Diego.

ONLINE ORDERS

At the moment, we only take online orders on Weds, Thurs, and Fri 7 AM through 1:30 PM.

PICKUP OR DELIVERY

Allergen Notice: Our bagels and schmears are prepared in a boutique kitchen environment where sesame, wheat, eggs, and dairy are frequently handled. While we follow strict cleaning and separation protocols, we cannot guarantee a 100% allergen-free environment. Cross-contamination with sesame may occur. If you have a severe allergy, please inform our team before ordering.
